Muffin Mistake Cake

So I made muffins the other week, and I didn’t grease the tin properly… and not a single one came out whole. Well, actually, I think one did, but I ate that one. They were very moist and spongy, so I figured I’d improvise a cake. It will work with any type of muffin, I guess, but I’ve included the recipe I used.

Muffin Mistake Cake

(muffin recipe adapted from Mr Breakfast)

  • 1 cup all-purpose flour
  • 1 cup ground almonds
  • 2/3 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup butter — melted and cooled
  • 2 eggs – beaten
  • 1 pck vanilla sugar
  • 1 package (12 oz) chocolate chips/12 oz chopped chocolate
  • 200ml heavy (whipping) cream
  • 2 TBS sugar
  • Bailey’s

Preheat oven to 400 F. and grease up twelve muffin cups.

In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips.

Spoon batter into muffin cups; bake 15-20 minutes, or until a knife inserted in center of one muffin comes out clean.

Let cool, remove from tin. If they come out whole, lucky you.

If they don’t: Eat two muffins. Remove the tops of the other muffins, set 7 of them to the side. Crumble the rest of the muffins into a 20×20 cm form. Press down until they form a more or less even plane.

With a tablespoon, generously drizzle Bailey’s (or other cream liqueur) over the whole thing. Whip cream, adding sugar. Spread over packed muffins.

Add muffin tops to decorate the top. Chill overnight.

I’ve had it on my harddrive forever, but I’ve just now discovered it with a passion: Torchwood. It’s scifi, it’s fast, it’s hot, it’s fun, it’s full of amazing sexual tension, and Captain Jack Harkness gives me the tinglies, never mind that I’m technically gay. But a little celeb crush never hurt anyone, and so I keep on drooling over the oversexed Captain.

Unfortunately, with all the eyecandy on the show somehow I made a mistake in Muir about FIFTEEN ROWS AGO and didn’t even notice until now that I’m missing a whopping FOUR STITCHES. That’s what you get for not paying attention. I’ll try and fix just that column, but I have a feeling I’m gonna have to pull back the whole, oh, 2355 stitches.

On the upside, I’ve finished the WGT socks and am well on the way with the second Mad Cow sock.

Now: More Torchwood.

My grandma. Has a couple of months left.

Deep down, I always knew it would come to this. She’s had bone cancer for over 25 years, it’s a miracle she’s even made it this far. But she was always relatively ok… except now it’s pretty much exploded all over her skeleton.

I’m still numb enough to debate whether or not it would be a good idea to just go to the party tonight and get totally, ridiculously smashed until I either forget from the alcohol or from puking my guts out.

I… I don’t even know.

She just got a new couch and armchairs last October.

If that’s not love, what is?

Today’s post is brought to you by The Fiddler on the Roof, because the songs have been stuck in my head all day today. It’s been over three years and I still know most of the songs by heart.

With my severe bout of knitting ADD, I’ve given up on trying to put all my current sock projects up on Rav. I mean, sure, it’s only three, four pairs of socks and two shawls and a hat, ignoring what languishes in my wardrobe, but like… I’ve barely been knitting these days. I think. But then… I started a sock at the Wollefest, finished that the day after. Then I wound some yarn and started my Kirk socks. My plan to avoid SSS seems to work, because I’m almost finished with the second sock there – though it was mostly stress knitting. I have a people hangover – too much time spent with people, too little privacy, and now my ex-roomie is there again, which is nice but exhausting, plus Christian’s bf will be here over the weekend which means lots of doing-stuff-together and… I want to throw myself out of the window.

And I started the Muir shawl, from Knitty, Fall 07. I’m making it wider, with four repeats instead of three, and I’m only a couple of rows along – but it’s so straightforward and soothing and logical and there’s only one chart I’ve almost forgotten about the anguish the Miralda Shawl has been causing me. Stupid thing.

At least my hair is red. And I got some handspun plied. It’s only a little bit – 38g I think, just over an ounce, but my, it’s pretty. And I have no idea where the rest of the stuff went. I bought 100g, I think, and I just cannot find the rest. Oh well. At least it’s relatively even, especially compared to my first tries.

It’s a good thing I just got another batch of quintuple chocolate brownies out of the oven.

Ugh. I hate, hate, hate Christian’s neighbors. All I wanted was to sleep and there was some person with a megaphone at the kindergarten around the corner, and now that that’s finally stopped – somebody started mowing the lawn. Which feels like a sledgehammer to my hung-over head.

Anyways. I’ve barely been knitting, which is weird. Lots of meta-knitting though, I have more or less decided to do Muir next, in the green merino lace yarn, which I still have to wind into a ball sometime soonish. But in the past 24 hours? I forgot my knitting bag at home, so all I could do was knit a bit on the bikini team project that’s been lugging around (Christian for the straps, me for the cups, Saskia for the neckband) but it’s kinda see-throughy. What else did I expect with 2.5mm though. Doop.

So, yeah. The real reason I’m posting here? Because I needed to note somewhere that Christian just gave himself a wedgie. That takes some very special talent.

It’s unreal how awesome this day was. Just hanging around at the lake, swimming in the cold, clear water, singing, laughing, napping, making terrible jokes… amazing.

Also, the plant-dyed yarns I bought? Total Star Trek colors. So I’m making Kirk-golden socks for me and Scotty-red socks for Saskia. With the Starfleet symbol duplicate stitched in the opposite color, probably. Wooot!
